Emily has been writing poetry for more than a decade. In May 2020, she started sharing this work with the world on her Instagram page, @emilylaytonpoetry. She has used this page to create a huge online network and meet other poets from around the world. As well as sharing her latest pieces, she is available for commissions. 

Emily is also a published poet. Her work has been featured in the Positive Wellbeing Zine for Mums (Issue 16), The Dubble, and London Poems on the Lockdown. She is currently working on her first collection for publication. 

In June 2022, Emily began performing her work at poetry nights around the country. She is part of the welcome and organisation team at the community arts night, Sweet Sundays, which takes place on the first Sunday of every month in Hackney.

In October 2024, Emily's sold-out poetry show 'Eating Satsumas in the Sun and Forgetting About Heartbreak' was debuted at the Lambeth Fringe Festival.
